Why quail eggs?

Quail eggs are considered a delicacy in many parts of the world, and are a common pantry item in others. Quail were regarded as an excellent source of protein by the Egyptians who raised them to feed workers. The quail even had it's own heiroglyph.

Unlike their chicken counterparts, quails fly and are migratory birds. Quail eggs have 3 to 4 times the amount of nutritional value than chicken eggs. If you would like to read more head over to Manchester Farms .

Cooking the quail eggs

I was lucky enough to run across some quail eggs at my local grocery store. I immediately scooped them up and brought them home. Never having had them before I was pretty excited to try out these adorable little eggs.

In the package I purchased I had 15 eggs. If you have more or less of them this recipe will work just the same. I did keep these in the fridge for one week prior to cooking them as aged eggs will peal easier.

Place your quail eggs in a steamer basket. Pour 1 ½ cups of water into the Instant Pot, and add a teaspoon of white vinegar. I used a 6-quart Instant Pot Duo for this recipe. Place the basket with the eggs into the pressure cooker. Seal the lid according to your manufacturer's instructions.

I use a simple to remember cooking time for these eggs. I use a 2-2-2 method. This means that I cook on the Steam or if you don't have it then the high pressure for two minute then follow with a 2-minute ice bath.

Tips on peeling quail eggs

You peel these pretty much just like you peel chicken eggs. Of course, they are smaller. I noticed that after rolling to crack the shell it was easier to peel from the fat end of the egg. I had to take some care not to damage the egg white as I was peeling as it was more delicate than chicken eggs.

The inside of the shell was a really pretty light blue color. This is normal, don't be alarmed. Serve immediately, or store in an airtight container for up to one week.
